Chickpea Broccoli Bowl for healthy lunch

You do not have to make chole every time you buy chickpeas. You can prepare a healthy rice bowl along with Broccoli. Isn’t chana a good versatile food? Prepare a healthy lunch with Chickpea Broccoli Bowl.

Chickpea Broccoli Bowl

Brown rice, cooked: 2 cups

Olive oil: 2 tsps

Scallions, diced:½ bunch

Broccoli florets:2 cups

Chickpeas, boiled and drained:¾ cup

Sesame seeds: for topping

Method

Take a medium skillet. Pour olive oil and heat over medium-low flame.

Stir in the scallions.

Cook for 2 minutes, until they turn soft.

Add broccoli florets and cook for two minuted.

Add little water and cover the pan.

Allow broccoli to steam until they turn tender.

Take off the lid and stir in chickpeas.

Cook til chickpeas turn warm

Add ¼ cup of the teriyaki sauce and cook for a minute.

Serve on a bed of brown rice.
